Can we collect reviews first and only publish them later?

Is it possible to use the emails to collect reviews? but not display on product page or website until we build a critical mass of product reviews. we have no reviews right now.

Yes, that is possible.

By default, new reviews will be published automatically. However, you can disable the Autopublish option in settings: 

Settings >> Review Widget >> Review Curation >> Review Curation

Then new reviews will be published only after you curate them as  Published.
